Πάσχα χωρίς τσουρέκι γίνεται; Δεν γίνεται! Κάθε σπιτικό αυτή την εποχή φτιάχνει τσουρεκάκια και μοσχοβολά ο τόπος! Εύκολη η παρασκευή τους και το αποτέλεσμα γευστικότατο!
Η συνταγή ανήκει στον αγαπημένο μας Παρλιάρο. Οι αλλαγές που έκανα είναι ότι χρησιμοποίησα μόνο αγελαδινό βούτυρο και αλεύρι για όλες τις χρήσεις. Επίσης επειδή οι ποσότητες δίνουν μια τεραστίων διαστάσεων πλεξούδα, προτίμησα να φτιάξω πολλές μικρές καθώς και σαλιγκάρια. Ευχόμαστε Καλό Πάσχα, να περάσετε όμορφα και φωτεινά αυτές τις ημέρες!
ΥΛΙΚΑ:
35 γρ. βούτυρο γάλακτος (πρόβειο)
35 γρ. βούτυρο αγελάδoς
100 γρ. φρέσκο γάλα
160 γρ. ζάχαρη άχνη
3 αυγά
5 γρ. μαχλέπι
5 γρ. μαστίχα τριμμένη ή 7 σταγόνες μαστιχέλαιο
100 γρ. νερό χλιαρό
40 γρ. φρέσκια μαγιά της μπύρας
650 γρ. αλεύρι σκληρό

In two days we celebrate Easter in Greece and every other orthodox country of the world. So today we are making a typical eastern sweet, tsoureki!
Tsoureki is a sweet egg-enriched bread. It is a delicious festive bread based on milk, flour, eggs, sugar, yeast, butter and a flavoring (mahlab, mastic). It is formed of braided strands of dough. During Easter holidays in every greek house the perfume of freshly baked tsoureki lingers all over the place!
This recipe (by S.Parliaros) is extremely easy! The changes I have made are: I used only cow butter and all purpose flour. The quantities given below give a very large loaf of tsoureki, so I prefered to make small braids or snails.
Ingredients:
35 gr. sheep butter
35gr. cow butter
100gr. fresh milk
160gr. powdered sugar
650gr. hard flour
1 egg to spread on top
flaked almonds
In a pot heat butter, milk, sugar, mahleb and mastic. It should not get more than 50οC hot. Remove from heat and add eggs. Stir well. In a bowl dissolve yeast in tepid water and add it to the butter mixture. Add flour and knead well so that the dough sticks no more on our hands. It is better to use a mixer (with the hook). You may need to add a little flour. Make a bowl, make a cross on it, cover with a towel and set aside for at least 3hours in a warm placeuntil doubled in volume and the cross can no longer be seen. Knead again slightly with your hands and separate it into 3 equal parts. With the help of a small quantity of flour roll each into a baguette and plait the three together. Place it on a baking sheet and then on a baking tray. Set again aside in a warm place for at least another hour until doubled. Mix egg with a little water and brush carefully all the tsoureki surface.Sprinkle with flaked almonds and bake in preheated oven at 180οC for about 1 hour until golden brown.
