Kourabiedes are butter cookies with almonds rolled in powdered sugar. It is a traditional sweet of Greece, popular especially at Chrismas time! The recipe is really easy and what I like the most is the absence of eggs from this version. I have found the recipe in a notebook but I can’t remember to whom it belongs! Anyway let’s get down to work!
250 gr. Fresh butter at room temperature
530 gr. Self rising flour (sieved)
100 gr. sugar
1 tsp baking powder
1 tsp vanilla
30 gr. cognac
250 gr. Almonds
powdered sugar or melted chocolate
Put almonds in warm oven (180 C˚) for 10 minutes. Beat butter and sugar with an electric mixer until foamy.Add vanilla, baking powder, cognac and flour (gradually)
The dough must be crumby. You have two choices: either to add almonds and then form the kourabiedes or to add as many as you want while forming each one of them. I prefer these condway. Place kourabiedes on a baking tray covered with a bakingsheet. Bake in warm oven at 200C˚ for25 minutes.
Sprinkle with powdered sugar or dip them in melted chocolate.
