Goodmorning, my dear friends! I am really excited for the recipe I am sharing with you today because it was a hit! Just to think of the fact that my husband preferred my vegan burgers to the pasta with minced meat my mom had made him gives me joy and makes me proud! When I used to eat meat, everybody said that my burgers rocked! Now I think I have become a specialist at vegan burgers! They are far better than meat burgers. Cold or warm they taste amazingly! I am sure you will love them! It is a nice way to sneak some veggies and legumes and get your kids eat things that may not want to!

Νηστίσιμα μπιφτέκια - Vegan burgers
Τα πιο νόστιμα νηστίσιμα μπιφτέκια με μανιτάρια κ χούμους!

Ingredients:
3  portobello mushrooms
7 Tbsp hummus  (1/2 of this quantity)
1 red pepper
1 medium  zucchini
1 medium onion
2 garlic cloves
2 cups oat flakes, ground to flour
1Tbsp parsley
4 Tbsp olive oil
salt and pepper

Instructions:
In a blender place mushrooms and process until ground (not mashed!). Set aside and place the rest of the ingredients except oats and pulse. Then combine this mixture with mushrooms, stir and add oats. Season with salt and pepper. Cover the mixture with a plastic wrap and put in the fridge (ideally overnight). Form burgers, place them on a baking sheet lined with parchment paper and bake in preheated oven at 190C for 25 minutes. Accompany them with rice, quinoa or potatoes or put them, as we did, in rolls with various vegetables (onions, peppers, spinach, tomatoes) and some hummus! Enjoy, my friends!
