Sometimes simple things are the best! When it comes to asparagus this is the case. Wild asparagus are hard to find, but they are unbelievably delicious! This salad is simple with few ingredients and owes its success to this amazing veggie! Vegans can omit eggs.

Ingredients:
1 bunch of wild asparagus
1 hard boiled egg, crumbled
2 Tbsp walnuts
1 garlic clove
2 Tbsp olive oil
juice and zest of 1/2 lemon
oregano
salt and pepper

Instructions:
Place asparagus in an aluminium foil, season with salt and pepper, pour 1 Tbsp of water and wrap them. bake them in preheated oven at 180C for about 40 minutes. Place then in a dish, top with walnuts, garlic, zest, oregano, egg and pour olive oil and lemon. Enjoy!
