I am a huge date fan! I mean the dried fruit, not going out with guys, ok? It is nature’s sweet! 1Whenever I crave for something sweet I eat 2-3 dates stuffed with walnuts. They are so yummy! I recently came across another idea on the internet! How about coating stuffed dates with chocolate? Oh, God, these must be droolworthy, I thought to myself! And yes, they were! You can stuff them with nuts of choice, peanut butter or other nut butter, tahini etc) and sprinkle them with shredded coconut, chia seeds, ground goji berries or nuts etc). These are like candy! An easy, delicious, 3-ingredient candy that will satisfy your sweet tooth! They also make a great gift! Who doesn’t like homemade edible gifts? Put them in a nice package with a beautiful ribbon and voila! You have a perfect sweet gift for your beloved ones! I made them for an old student of mine, a girl that I love very much, my Loukoumaki! She loved them! And I bet you will love them too, if you make them!

30 gr. walnuts (or other nut of choice)
75 gr. vegan chocolate (sugar free)
Cut dates lengthwise and remove pits. Don’t split them into two parts! Stuff with walnuts and close the date. Due to its sticky texture it will be easily «sealed». Melt chocolate in baine marie. Dip each date into the chocolate so that it is coated and then lay them on a baking sheet lined with parchment paper. Srinkle with ingredients of choice (optional). Wait until chocolate freezes or for quicker results put in the fridge. Store in the fridge in an airtight container or in a cool place. Let come to room temperature before eating. Enjoy!
