There are some days that you ask yourself «what should I cook today?» and you get no answer. I guess this happens to you too! Lack of inspiration is common, isn’t it? One of these days I opened the fridge and found small quantities of many things. I put them together and I cooked this impromptu vegetable stew that turned out great. My husband loved it and even took a bowl of it at work the following day. The presence of cauliflower in this recipe reminds us of rice, so this is a good way to feed your reluctant kids some of this delicious veggie. It is yummy both served warm and cold.

Λαχανικά στην κατσαρόλα

Ingredients (serves 4):
3 eggplants
1 zucchini
1 onion
2 garlic cloves
150g oyster mushrooms
1.5 cups  grated cauliflower
4 tomatoes
1 Tbsp oregano
1 Tbsp parsley, finely chopped
8 Tbsp olive oil
salt and pepper

Instructions:
Cut into small pieces eggplant, zucchini, tomato and oyster mushrooms. Grate cauliflower. In a saucepan put the olive oil and saute grated onion and garlic, then add the chopped vegetables, cauliflower, parsley, oregano, a glass of water and season with salt and pepper. Allow to cook until water is absorbed. If it’s necessary, add some more hot water. Enjoy!
