A Waldorf salad is a salad generally made of fresh apples, celery and walnuts, dressed in mayonnaise, and usually served on a bed of lettuce. The salad was first created between 1893 and 1896 at the Waldorf Hotel in New York City. It is one of the most popular winter salads. It is vey filling, crunchy, yummy and healthy. I made it using my favorite homemade vegan mayo and it was absolutely mouthwatering! p.s. I deliberately didn’t crop the first pic and you can see my belly (7.5 months pregnant). It seemed so funny, If I shot the recipe today, my belly would be even bigger!

Ingredients (serves 3-4):
2 lettuce leaves
1 carrot, grated
3 celery stalks, chopped
1 apple, half sliced, half diced
2 Tbsp raisins
4 Tbsp walnuts
3 Tbsp vegan mayo
2 Tbsp olive oil
2 Tbsp lemon juice
salt and pepper
On a platter place lettuce leaves. In a bowl combine carrot, celery, diced apple, raisins and walnuts. In another bowl combine olive oil with vegan mayo and lemon juice. Pour over the salad and stir. Season with salt and pepper. Transfer on the lettuce leaves. Garnish with apple slices. Enjoy!
