Hello, dear friends! Today we are making a traditional popular Greek dish called spetsofai. It contains peppers, sausage all cooked in rich tomato sauce. Sometimes it can be cooked with eggplants too or with lima beans. I decide to veganize it and used portobello mushrooms instead of sausage. The result was amazing and much healthier of course! I served it with rice. Potato puree or fries would be lovely as well. Although I love fries, I never fry anything in my house! I consider it very unhealthy. Anyway you should try this dish. It is amazing and I am sure you will love it!

Ingredients (serves 4):
400 gr. or 4 big portobello mushrooms, coarsely chopped
2 red, green  peppers coarsely chopped
1 big onion
750 gr. tomato juice
1 Tbsp tomato paste
6 Tbsp olive oil
1/3 cup red wine
1/2 Tbsp sweet paprika
1 Tbsp oregano
salt and pepper

Instructions:
In a pot saute veggies in 3 Tbsp olive oil for 2 minutes. Then pour wine. When it evaporates pour tomato juice and paste, and allow to cook on medium heat. When the sauce starts to thicken, pour the rest of the oil and season with salt, pepper, paprika and oregano. Let simmer for a few more minutes and remove from heat. Serve with rice, potatoes or puree. Enjoy!
