Goodmorning, my dear friends! Stifado is a greek traditional dish made with rabbid or hare, pearl onions cooked in tomato sauce. When I was a little girl, I couln’t eat it because I loved rabbits! They are so cute, aren’t they? So I only ate the onions…It is high time I veganized this dish I thought to myself a few days ago! So here you are! A vegan stifado with potatoes, carrots and of curse pearl onions scented with cinnamon cooked in a delicious thick tomato sauce! This is mouthwatering! Meat eaters loved my dish and literally devoured it! You can add mushrooms too. You should definitely try it!

Ingredients (serves 4):
600 gr. pearl onions, peeled
1 kg potatoes, peeled and cut in big pieces
2 sliced +1grated carrots
500 gr. tomato juice
1 tsp tomato paste
1/2 or 1 tsp cinnamon
5 bay leaves
8 Tbsp olive oil
salt and pepper
In a pot place potatoes, pearl onions, carrots, bay leaves and 3 glasses of water and let cook. When they begin to soften, pour tomato juice and paste. Let simmer. In the end pour olive oil, add spices and let the sauce thicken. Enjoy!
