Vegan soutzoukakia («meatballs» in tomato sauce)

Soutzoukakia is a traditional greek dish. It has its origin from the city of Smyrni or modern day Izmir. The secret ingredient that makes these meatballs (soutzoukakia) unique is nothing else than cumin. Yummy balls soaked in a rich tomato sauce served on puree or a bed of rice they are a popular meal in Greece. In this vegan version I have used soya mince. This is a super easy and tasteful recipe that you should try!

Ingredients:
1 big glass of water soya mince (135 gr.)+3 glasses of water
1 onion, finely chopped
2 garlic cloves, minced
1 1/2 tsp cumin
100 gr. bread crumbs
3 Tbsp olive oil
salt and pepper
for the tomato sauce:
500 gr. tomato juice
1 onion, finely chopped
2 garlic cloves, minced
salt and pepper
1/2 tsp cumin
2 Tbsp olive oil

Instructions:
Cook soya mince according to package instructions. Place it in a bowl along with all the other ingredients. Knead well, cover with a plastic wrap and place the bowl in the fridge for 1 hour.   In the meantime make the sauce. Put all the sauce ingredients in a pot and cook over medium heat. When the sauce turns thick remoe from heat.  Shape the dough into oblong «meatballs» and lay them on a baking sheet lined with parchment paper. Bake in preheated oven at 180 C for about 1 hour flipping them halfway through. When ready, remove from the oven and let cool. Add soutzoukakia in the tomato sauce and stir gently. Try not to break them. Enjoy!
