Hello, my dear friends! Today we are making a delicious and wholesome snack: a sandwitch with veggies, vegan cheese and a tasty hummus! The hummus is made with red beans and roasted garlic and it is really mouthwatering! You should definitely try it! I used the delicious «Viofast tomato and basil cheese» which is 100% vegan, dairy-free and lactose free. It is made by a greek company called Viotros which produces a large variety of vegan cheese.

for the hummus:
220 gr. red beans, cooked
1/2 garlic head
2 Tbsp olive oil
1 Tbsp vinegar
1 tsp tahini
a handful of fresh mint leaves
salt and pepper
for the sandwitches:
bread,thinly sliced and roasted
Viofast tomato basil cheese, sliced
radishes and white mushrooms, thinly sliced
green salad leaves
Cut the bottom of the garlic head and wrap with an aluminium foil. Bake in preheated oven at 180C for about 45 minutes. Allow to cool and squeeze the garlic flesh out of each clove. In a blender pulse all hummus ingredients until smooth. Spread hummus over the toasted bread slices. Top with green leaves, radish, mushroom and cheese slices. Sprinkle with oregano and freshly ground pepper and serve. Enjoy!
