Good morning, dear friends! After a few days of absence I am back! Don’t dare to think that I was lazy all these days and didn’t develop any new recipe! On the contrary I have been very productive! Today I am posting one of them! My vegan quinoa tacos! Oh God, these babies are awesome. I dont know much about Mexican cuisine and I can’t stand spicy food. This is a mild version of a classic mexican dish. Tacos are usually filled with chicken, minced meat, seafood. I opted for quinoa and red beans (to get protein) and veggies. An avocado sauce takes these tacos to a another level and enhances their flavor! Do try them, I know you will love them. After shooting the recipe I had 2 even though I had already eaten my mrning oats. These are irresistible!
Happy new week! Happy cooking! Kisses and hugs, sweethearts!
