Our dear friends, today we are making a different kind of cookies! We are not baking since they are raw. These cute little bites resemble oreo cookies but they are far better. They are vegan, packed with nutrients and really filling! This is the ideal snack for your kids. No need for unhealthy storebought cookies anymore!

for the cookie dough:
1 cup walnuts
1/4 cup flaxseed
1/2 cup cacao powder
1/2 cup oats (gf)
1/2 cup dates, soaked in water for 15′
2 tsp water in which sates were soaked
for the filling:
1 cup cashews, soaked for 6-8 hours
1 Tbsp coconut oil 1 Tbsp agave syrup
1 Tbsp vanilla extract
For the cookie: In a food processor blend walnuts, flaxseed, soaked dates and cacao powder until smooth. You may need to add 2 tsp of the soaking water, so that the filling is spreadable. On a parchment paper place the dough and roll it out with a rolling pin until dough is as thick as you see in the pics. Cut out circles with a circular cookie cutter. Put circles in the fridge while you are making the filling.
For the filling: Process all the ingredients of the filling until smooth and creamy. Assembly: Remove cookies from fridge. Spread cream onto one cookie and cover with the other. Store in a bowl and refrigerate. After 12 hours they are ready. (they are tastier when well cooled). Adapted from here.
