Good morning, sweethearts! Today is a special day for me since I am turning 40! Oh, yes, you got that right! It’s my birthday! Time really goes by so quickly! I still remember the time when I was a kid, then a student etc…Don’t worry, I am not going through depression about my age. I am not afraid of time. On the contrary I welcome time and I think that’s the reason he has been good to me! I still feel very young. Should I attribute it to my optimism, the birth of my son, my running? I dont know…When I saw the first white hair, I did not panic. Far from that! I was moved and said to myself «Eleni, you are getting old, honey!». It may sound trite but it is true! Our age is not a matter of numbers. Numbers have nothing to do with that! Our age is about how we feel, how we deal with life, what we radiate inside out! So, relax, people! Enjoy your age and don’t be afraid! Getting older means getting wiser and mentally richer! I feel like a 20-years-old girl with the brains of a 40-years-old woman. How cool is that!
So today the recipe I am posting is of course a sweet treat for my birthday! A decadent vegan nutella ice cream with chocolatey hazelnuts! This is heavenly, guys! You definitely must try it! I loved it and I bet you will too! Make it for your kids! It is so yummy!

1 can coconut cream (400 ml)
1 batch of homemade vegan nutella (320 gr.)
65 gr. soy chocolate milk
1/4 cup agave syrup
100 gr. vegan chocolate
60 gr. raw hazelnuts
The night before, place your ice cream churning bowl in the freezer to chill. Begin by making the vegan nutella. Set aside. Then melt chocolate in baigne marie. Fold in hazelnuts and stir until well coated. Lay them on a baking sheet lined with parchmaent paper until chilled. For quicker results put them in the fridge to cool. Beat in a mixer the chilled coconut cream (it has to be chilled in the fridge at least overnight) until creamy and fluffy. Add nutella and beat. Add soy milk and agave syrup and beat again. Fold in hazelnuts. Add mixture to ice cream maker and churn according to manufacturer’s instructions – about 20 minutes. It should look like soft serve. eat right away or transfer the ice cream to a large freezer-safe container. Set out for 10 minutes before serving to soften. Enjoy!
