Good morning, dear friends! Today I ‘ve got a great recipe for you and a yummy giveaway! We wil make an amazing vegan pizza with minced meat and the new cheese by Viofree!
Viofree are a series of vegan cheeses made only with plant based ingredients and are suitable for vegetarians & vegans, those who are lactose/soy/gluten intolerant and those who fast. Their main ingredient is coconut oil which is rich in vitamins, minerals, good fats and antioxidants. They contain no GMO, conservatives, allergens and are low in fats and cholesterol. It was my pleasure to try their new Viofree Organic for pizza! I wanted to make a special pizza and use no trite pizza ingredients! So I came up with the idea of making mushroom minced meat. (Remember the pasta with mushroom minced meat I had posted a month ago) and topped my pizza with this new cheese. It turned out fantastic! If you want to cut down on dairy for health or ethical reasons, I recommend you try this line of cheeses! Ingredients (yields 2 pizzas):
for the dough: click here
for the minced meat:
650 gr. white mushrooms
3 garlic cloves
1/4 cup walnuts, ground
2 Tbsp olive oil
2 1/2 Tbp tomato paste
1 tsp sweet paprika
1/2 tsp cumin
3 Tbsp parsley, finely chopped
200 gr. Viofree organic for pizza, grated
1 pepper, sliced
1 onion, sliced
Make the dough. In the meantime make the minced meat. Pulse mushrooms, onion, garlics , carrot until ground. Put them in a non sticking pan and cook over medium heat. Add tomato paste, paprika, cumin and finely chopped parsley. When liquid is absorbed, pour olive oil, add ground walnuts, stir well and remove from heat. Season with salt and pepper and set aside. Divide the dough in 2 parts and roll it out with a rolling pin. Line a pizza pan with parchment paper and put the dough on it. Spread half of the minced meat, top with pepper and onion slices, grated cheese and bake in preheated oven at 180 for about 40-45 minutes until dough is done. Top with walnuts and serve. Follow the same instructions for the second hal of the dough. Enjoy!
