Good morning, dear friends! I am back after a few days of absence after my marathon! I would like to celebrate my finishing last Sunday’s Athens Marathon with a yummy, healthy dessert! I will tell you all about the race in a special post next week! It was a tough race due to the bad weather conditions and my lack of sleep. But I managed to finish it!
This dessert is so refreshing and easy to make! You should definitely try it!It consists of a date-oat crust and a light lemon cream. You only need few ingredients to make it and you will make your taste buds happy!

Ingredients (serves 5):
for the crust:
1/2 cup (85 gr.) dates
1/2 cup (50 gr.) oats
lemon zest
for the cream:
200 gr. Viofree creamy original
3 Tbsp lemon juice
3 1/2 Tbsp maple syrup
1 Tbsp coconut oil

Instructions:
Soak dates in hot water for 1 hour. Drain them and pulse them in a blender until you get a paste. Add the rest of the crust ingredients and pulse again until well combined. Empty the crust into five mini cups and press with your fingers. Pulse the cream ingredients in a blender. Empty cream into the cups, top with lemon zest and put in the fridge. Allow to cool for a few hours. Enjoy!
