Happy February everyone! Today we have prepared an amazing sweet treat for you, dear friends! We present you a Vegan Cheesecake flavored with coffee and hazelnut. This is a winner, trust me! We used our favorite coffee in the cream that is espresso Buondi which is a fine product of Nescafe Dolce Gusto. We love coffee and we enjoy having a nice cup od delicious coffee at home any time of the day. Ingredients:
for the crust
2/3 cup dates
1 cup almonds
1 Tbsp chia seeds
3 tsp rice flakes
6 Tbsp hazelnut butter
for the cream
2 cups raw cashews (soaked for 5 hours)
1/4 cup agave syrup
3 Tbsp coconut oil
5 Tbsp NESCAFÉ Dolce Gusto ESPRESSO BUONDI
5 Tbsp hazelnut butter
dark chocolate, grated for topping
Instructions:
for the crust:
Soak dates in hot water for 30 minutes. In a blender pulse almonds, then dates until smooth. Add chia seeds, rice flakes. Pulse again. Add hazelnut butter and pulse until smooth. Keep one tablespoon of this mixture aside (for topping). Press this mixture into the bottom of a springform tin and set aside.
for the cream:
In a high speed blender place all ingredients and pulse until creamy. Spread the cream on the crust and allow to cool overnight in the fridge. Top with grated chocolate and the crust mixture you had kept aside. Enjoy!
