Good morning, everyone! I hope you are fine, dear friends! We welcome September with a very yummy cake made with raisins and scented with cinnamon. It is the ideal breakfast for your kids and a great accompaniment for your coffee!

I am writing these lines in a hurry cause in a few minutes the workers in my house our going to start demolishing a wall…As I have told you before, we are renovating our house and it is a tough period for us! Anyway, the thought of our new house gives me courage to hold on!

Νηστίσιμο κέικ κανέλας με σταφίδες

Ingredients (serves 12):
3 cups wholewheat flour
1 Tbsp cinnamon
1 tsp clove powder
1 tsp baking powder
1 cup/ 230 gr. applesauce
3/4 cup sunflower oil
1/2 cup plantbased milk
3/4 cup coconut sugar (or brown)
1 1/4 cup raisins
for the glaze (optional):
1/4 cup powdered sugar
1/2 Tbsp maple syrup
1/3 tsp vanilla extract
1 1/2 Tbsp plantbased milk

Νηστίσιμο κέικ κανέλας με σταφίδες

Instructions:
In a bowl combine flour with cinnamon, clove and baking powder. In another bowl combine applesauce with oil, milk and sugar. Then put the dry ingredients into the wet ones and stir to combine. Fold in raisins. Transfer batter in a greased medium sized baking dish and bake in preheated oven at 180 C for about 25-30 minutes. When a knife inserted in the centre comes out clean, remove from the oven. Allow to cool. Whisk the glaze ingredients and drizzle over the cake. Wait until it cools before serving. Enjoy!
