Vegan giouvetsi (orzo)

Giouvetsi is a traditional Greek dish made with kritharaki (orzo) and beef baked in tomato sauce and spices. I made a vegan version for my hubby and daughter and they loved it. I used soy kebab which I marinaded overnight and turned out amazing! I don’t usually bake giovetsi, I prefer cooking it in a pot because it keeps better the next day. If you bake it, the next day will be stale and insipid. Happy weekend, friends!

Ingredients (serves 3):
2 cups soy kebab
1 red onion, finely chopped
2 garlic cloves, finely chopped
2 carrots, finely chopped
300 gr. tomato juice
250 gr. medium orzo
6 Tbsp olive oil
cinnamon, clove powder
salt and pepper

for the marinade:
wine of choice
clove powder, cinnamon, allspice
salt and pepper


Cook soy kebab according to package instructions. Then drain them and put them in a bowl and cover with wine. Season with salt, pepper, cinnamon and clove powder. Allow to marinade overnight. The other day saute onion and garlic. Add marinaded kebab, carrots, tomato juice, water enough to cover everything, cinnamon, clove powder and let cook. When «meat» is tender, add orzo, season with salt and pepper.  (you may need to add more hot water). You must stir the food all the time. When the water is evaporated, remove from heat. Enjoy!
