Good morning, dear friends! The heat wave we are undergoing here in Greece made me scream for ice cream. I wanted to make an easy ice cream with few ingredients that would taste heavenly and that would be healthy too! And yes, I did it! This vegan coconut ice cream with chocolate chunks is decadent! It fits the bill and it is so refreshing. I used Alpro’s chocolate almond milk that is amazing, one can of coconut milk (don’t forget to chill it overnight and discard any liquids!), agave syrup as a sweetener and chocolate chunks. You see, just 4 ingredients and you are in heaven! You should definitely try it!

Ιngredients (serves 3-5):
1 can (365 gr.) of coconut milk (chilled overnight and drained)
1 cup Alpro Almond Dark Chocolate
1/4 cup agave or maple syrup
50 gr. vegan chocolate, cut in chunks
toppings: almonds, chocolate shavings, shredded coconut, sour cherry syrup etc
The night before, place your ice cream churning bowl in the freezer to chill. Beat in a mixer the chilled coconut milk (dispose any liquid) until creamy and fluffy. Add soy milk and agave syrup and beat again. Fold in chocolate chunks. Add chilled mixture to ice cream maker and churn according to manufacturer’s instructions – about 20 minutes. It should look like soft serve. Top with your favourite ingredients and eat right away or transfer the ice cream to a large freezer-safe container. Set out for 10 minutes before serving to soften.
