Ingredients:
1 cup raw cashews
120 gr. strawberries
30 gr. agave syrup or other sweetener
50 gr. vegan chocolate (finely chopped or grated)
160 gr. vegan cookies, ground
for coating:
200 gr. vegan chocolate
20 gr. vegan cookies, ground

Instructions:
Soak cashews at least for 3 hours. Put them in a blender and pulse until smooth. Add sweetener and strawberries and pulse again. Whem smooth add cookies and chocolate. Mix to combine. Put in the fridge for at least 1 hour and then form into balls. Put them back in the fridge for another hour. Melt chocolate in baigne marie and dip each bowl in melted chocolate. Place them on a baking sheet lined with parchment paper and allow to cool. While still hot top with cookies. You can store them for 5 days out of the fridge now that it’s not hot. Otherwise keep them in the fridge. Enjoy!
