In previous posts I have already told you how much I love quinoa! There are so many things you can make with it. My quinoa breakfast bowl was my first sweet experiment. These brownies are my second sweet attempt with quinoa. They turned out great. They are really healthy, flourless and vegan. I am sure you will love them!

Ingredients (9 squares):
2 cups quinoa, cooked
1/2 cup banana, mashed (=1 banana)
1/4 cup soy milk
3/4 cup coconut sugar
1/2 cup cocoa powder
50 gr. chocolate chips
50 gr. walnuts
1 Tbsp maple syrup
1 tsp baking powder
1 tsp vanilla extract
In a blender pulse all the ingredients (except for the chocolate chips and walnuts) and pulse until smooth. Then fold in chocolate and walnuts. Transfer batter in a small baking pan lined with parchment paper and bake in preheated oven at 180C for about 40 minutes. Allow to cool before cutting to pieces. Enjoy!
