Summer is getting closer, so we all crave for our favorite summer dessert! Ice cream is a real temptation and I want to enjoy it all summer long! But I want homemade ice cream made with healthy and wholesome ingredients! No bad calories, no strange ingredients. So, I decided to make my first vegan icecream that I had bookmarked a few days ago. We all know that chocolate and peanut butter is a winning combo and I was sure that it would be amazing. We all loved it and I advise you to try it!

Ingredients (serves 3-4):
1 cup raw cashews
450ml coconut milk
1/2 cup cocoa powder
½ cup agave syrup
½ cup peanut butter
80 gr. vegan chocolate, chopped
melted chocolate and peanut butter for topping (optional)
Soak cashews for 1 hour. Put coconut milk in the freezer for at least 2 hours. (the more it stays there, the creamier the icecream will get). Place all the ingredients except for the peanut butter in a food processor and blend until creamy. Transfer icecream in a container, drizzle the peanut butter and swirl it with a knife. Cover and place in the freezer for at least 2-3 hours. Allow to slightly thaw for 5-8 minutes before serving. Serve in bowls and top with melted chocolate and peanut butter. Enjoy!
