Good morning, dear friends! Happy new year! We wish you a year full of joy, serenity, health and creativity! May 2016 be a wonderful year for all of you! The first recipe of the year is a sweet treat. Vegan chocolate oat apple walnut truffles. I dare say they are absolutely delicious, maybe the best I have ever made! They are easy and quick to make and require only a few simple ingredients. The first recipe of 2015 was truffles too! What a coincidence!

Ingredients (yields 13):
1 1/2 cup oat flakes
3/4 cup walnuts + a little more for topping
1 big apple, peeled (180 gr.)
50 gr. vegan chocolate, melted
1 Tbsp agave syrup
1 tsp cinnamon
1/2 tsp clove powder
In a blender pulse oats and walnuts until powdered. Add cinnamon and clove powder. Transfer mixture in a bowl. Pulse apple until pureed and add it in the oat mixture. Stir to combine. In the melted chocolate add the agave syrup and stir to combine. Then pour this mixture into tha oats and stir until well combined. Cover with a plastic wrap and allow to cool in the fridge for half an hour. Then form into balls and roll them on finely chopped walnuts. Keep in an airtight container in the fridge.Enjoy!
Note: the dough gets thicker in the fridge. Add more oats, if it’s not thick enough. Adjust sweetness to taste
