Happy November! You may have noticed, my dear friends, that we do not use white sugar in our recipes. Instead we use so many other sweeteners such as coconut sugar, dates, maple syrup, agave syrup, honey. There are so many options. I am going to tell you all about them in another post. Today we are making delicious vegan chocolate muffins and for the first time I used lucuma powder in this recipe. Lucuma powder is made from whole peruvian lucuma fruit that has been dried and milled into a fine powder. It is a low glycemic sweetener and contains many nutrients.
Use odorless coconut oil. Make these delicious healthy muffins and enjoy them with your kids!

1 cup lucuma powder
1tsp baking powder
1cup dates, finely chopped
1 cup soy chocolate milk
a pinch of salt
1/2 cup coconut oil, odorless
1/2 cup almonds, coarsely chopped
2 Tbsp hemp flour
1/4 cup whole wheat flour
1 Tbsp vanilla extract
70 gr. dark chocolate, finely chopped
In a bowl combine lucuma, baking powder, salt and flours. In a blender pulse dates, soy milk, coconut oil and vanilla extract until smooth. Combine the two mixtures and fold in almonds and chocolate. Divide batter into 8 greased muffin cases. Bake in preheated oven at 180C for about 22-27 minutes.
