Vegan chocolate coconut cheesecake with La Mia Stevia

Goodmorning, our dear friends! Today we are cooking a delicious vegan cheesecake which combines two of our flavours: chocolate and coconut! It is absolutely mouthwatering! Even our dad, who doesn’t have a sweet tooth, enjoyed it! It is made with La Mia Stevia, a new amazing Greek product, healthy and natural that has no calories and is ideal for people suffering from diabetes or those who want to avoid sugar. 1 Tbsp of La Mia Stevia is equivalent to 3Tbsp sugar. In this cheesecake 2 Tbsp were enough to sweeten the cheesecake! You should try it! It is so easy and quick to make and yet so yummy!

Ingredients:
for the crust:
500 gr. vegan cookies
120 gr. vegan butter, melted
for the filling:
800 ml coconut cream, chilled overnight
1 ripe banana, mashed
125 gr. dark chocolate, melted
2 Tbsp cocoa powder
2 Tbsp La Mia Stevia
for the topping:
50 gr. dark chocolate, melted

Instructions:
In a blender pulse cookies until powdered. Put them in a bowl and pour butter. Mix until well combined. Transfer the mixture on a springform pan. Press the mixture with your hands so that it forms a crust. Allow to cool in the fridge. In a food processor beat coconut cream until fluffy. Add stevia, cocoa powder and banana and beat again. Then pour in the melted chocolate and with a spatula stir to combine. Transfer this cream over the crust, even it with the spatula and put back in the fridge. After 2 hours drizzle with the extra chocolate and allow to cool overnight. Enjoy! (For a raw crust make this one or this one)
