Hello, our dear friends! Lately I have been hooked on making pizzas! I guess it has happened to all of you. I made a new pizza almost every day. I love trying new combinations of ingredients. Unfortunately here in Greece the most popular kind of pizzas are «margheritta» (tomato sauce and cheese) and «special» (lots of cheese, bacon, mushrooms and peppers). I topped all of my pizzas with yummy healthy ingredients and the results were amazing proving that even vegans can have mouthwatering pizzas! The recipe I am sharing with you today combines beet, onions, olive paste and pine nuts. I bet your taste buds will be thrilled if you try it!

Ingredients:
for the dough:
170gr tepid water
280gr flour
4gr dry yeast
2 Τbsp olive oil
5 sundried tomatoes, finely chopped
salt and pepper
dried oregano

for topping
125 gr. beets, cooked
2 medium onions, sliced
3 Τbsp olive paste
2 Τbsp pine nuts
1 Τbsp rosemary
5 Τbsp olive oil

Instructions:
In a bowl place yeast and dissolve it in water beating well with an eggbeater. Add salt and sun-dried tomatoes, oregano and olive oil. Stir until well combined. Add flour gradually and stir until you get a soft dough. Set dough aside to sit and rise for about 40 minutes (it depends on the room temperature). In a frying pan pour some olive oil, place onions and let them simmer at very low heat (1 when maximum heat is 9) for almost 30 minutes until soft and translucent. Remove from heat. Two minutes before removing from heat add rosemary and pine nuts. Grease your baking sheet and roll out the dough. Spread with olive paste, top with beetroot slices, onions and pine nuts. Bake in preheated oven at 180-200C for about 25 minutes (15 minutes on air and 10 minutes to down resistance). Enjoy!
