Ntomatokeftedes (Tomato patties) is a traditional appetizer of Santorini. This island is not only known for its scenic beauty but also for its unique delicious tomatoes with firm texture and sweet flavour. This is due to its volcanic terrain, the extremely dry climate and the humid nights. The inhabitants use these tasteful tomatoes to make their ntomatokeftedes. Their flavor is boosted even more with the addition of ladotyri Mytilinis ! So, let’s cook!
200 gr. red onion, finely chopped
100 gr. ladotyri Mytilinis P.D.O. , grated
15 fresh mint leaves, finely chopped
7-8 Tbsp flour
1/2 tsp sugar
Peel, seed and dice tomatoes. Put them in a strainer, season with salt and let them sit for 30 minutes. In a bowl combine diced, tomatoes, onion, ladotyri, mint, sugar and pepper. Add flour gradually until the mixture can be formed into patties (the quantity of the flour you will need depends on how juicy the tomatoes are). Set aside for about 30 minutes. Heat olive oil and with a spoon add mixture in the frying pan. Fry until golden brown on both sides. Place them on paper towel to absorb extra olive oil. Enjoy!
