As I have mentioned before I am a huge pasta fan! I love making easy and quick pasta recipes. Sometimes with just few ingredients you can work wonders! This dish is an example of simple but delicious cooking! You only need lots of fresh basil, garlic, good quality olive oil and tomato puree. I used to make it with fresh tomatoes but I have come to the conclusion that tomato puree gives a thicker and richer sauce, so I prefer it. The cheese you see in the pictures is plant based and I am going to talk to you about it in a next post. I am sure that you will enjoy it if you try it! Let me know if you make it!

Ingredients (serves 3):
500 gr. linguini
500 gr. tomato juice
5 garlic cloves, minced
15 fresh basil leaves
5 Tbsp olive oil
salt and pepper
vegan parmesan or cheese of choice
Put tomato puree, garlic, 10 basil leaves in a pot and cook over medium heat. Season with salt and pepper. When the sauce gets thick add olive oil. In the meantime cook pasta according to package instructions. When ready, drain them and transfer them in the pot with the sauce. Stir until well combined. Serve and top with cheese of choice. Enjoy!
