I love pasta salads. They are yummy, easy, filling and so versatile! They keep well in the fridge and make an amazing office lunch! Remember this one, this one and this one. So today we are making another one and we will be using the vegan tartar sauce we made last week. You can have this dish as a salad or as main. I dedicate this post to our dear sister, Sophia and I would like to thank her for the dishes she bought me. She certainly knows how to please a food blogger! Thank you, honey! We love you!

Ingredients (serves 5):
400 gr. farfalle
1 cup peas
1 cup corn
1 onion, finely chopped
3 coloured small peppers, finely chopped
fennel, finely chopped
1 batch of our vegan tartar sauce
salt and pepper

Instructions:
Cook pasta according to package instructions. Cook peas and corn. In a big bowl combine veggies and drained pasta. Pour the sauce. Stir to combine. It is delicious served cold or warm! Keeps well in the fridge. Enjoy!

Good morning, dear friends! I have noticed that lately I keep posting dessert recipes. So today I decided to follow a savoury path and make a delicious potato salad with my favourite fruit, avocado! I was inspired by an old recipe developed by Dimitra. It is a filling salad ideal for a festive table. It doesnt keep well in the fridge, so you ‘d better finish it off the day you make it.  If you dont have mint or peppermint, use parsley. Do not omit herbs! They enhance the flavour of the salad so much! By the way I am going to remind you of this potato salad. It is very yummy as well. Πατατοσαλάτα με αβοκάντο

Ingredients (serves 4-5):
4 potatoes, peeled (650 gr.)
3 tomatoes (450 gr.), cubed (keep the seeds)
1 onion, finely chopped
1/2 bunch of rocket
1 avocado, halved (80+80 gr.)
2 garlic cloves
3 Tbsp lemon juice
4 Tbsp olive oil
1 Tbsp mustard
1 tsp agave syrup or honey fr non vegans
3 Tbsp mint and peppermint leaves
1 Tbsp sesame seeds
salt and pepper

Instructions:

Cook potatoes. Ina bowl place the half of the avocado (diced), diced tomato (keep the seeds, we will need them for the dressing), onion, rocket, 1 Tbsp olive oil and mix well. In a blender pulse the rest of the avocado, lemon juice, agave syrup, garlic, mustard, tomato seeds, olive oil, mint and peppermint leave, salt and pepper. In a large bowl put potatoes cut in cubes, the rest of the ingredients and the dressing. Stir until wel coated. Be careful, do it gently so as not to mash the potatoes. Transfer in a platter and sprinkle with sesame seeds. Enjoy!

The secret to a great salad is the dressing. Noone enjoys grazing a dry salad like a cow, right? So if you mix your greens with a luscious rich dressing, magic will happen!

This dressing is refreshing, lemony and has a deep rich taste due to avocado! It pairs well with green salads but you also can use it as a suace for pasta or a dip. I bet you will love it! Kisses and hugs!
Ingredients:
160 gr. ripe peeled avocado (1 big)
2 garlic cloves
1/2 bunch of fennel
4 Tbsp olive oil
5 Tbsp lemon juice+zest
1 Tbsp maple or agave syrup/ honey (for non vegans)
salt and pepper

Instructions:
Just put all ingredients in a blender and pulse until smooth. Pour the sauce over a green salad, or pasta or just spread it on bread. Enjoy!

Good morning, my dear friends! Cold weather calls for soups and nice comfort food. Latey I have a crush on chickpeas and keep cooking them in new ways. They are so yummy, filling and healthy. My last experiment was this salad. It was a hit! The whole family loved it. You can pulse it and make a spread. It is also fantastic! Happy new week everyone!

Ingredients: (salad for 4, main dish for 2, appetizer for more!!!)
2 cups chickpeas, cooked
1 medium carrot, shredded
1 fresh onion finely chopped
2 Tbsp fennel finely chopped
for the dressing:
2 cloves garlic
4 Tbsp tahini
4 Tbsp lemon juice
4 Tbsp olive oil
6 Tbsp water
1/2 cup parsley
salt and pepper
sesame seeds, walnuts for topping

Instructions:

In a blender pulse all the sauce ingredients. Add water if you want it thinner. In a bowl combine chickpeas with carrot, onion, fennel. Add sauce and stir to combine. Serve on lettuce leaves if you have it as a salad or you can pulse it in the blender and make a delicious spread! Enjoy!

It’s cabbage season, friends! The ultimate winter vegetable is at its best. I usually use it in politiki salad. But ever since I made my vegan mayo, I tried to make a new cabbage salad. So I made coleslow, a very popular winter salad. It is very tasty and filling. I even use it as a sandwitch ingredient. It keeps well in the fridge.

Ingredients (serves 2):
200 gr. cabbage, finely chopped
1 carrot, grated
1/2 onion, finely chopped
1 small apple, grated
parsley, mint, finely chopped
1 Tbsp poppy seeds
4 Tbsp vegan mayo
1 tsp agave syrup, mustard, vinegar
salt and pepper

Instructions:
In a bowl combine cabbage with apple, onion, carrot and herbs. In another bowl combine mayo with vinegar, mustard and agave syrup. Pour dressing over the salad and stir until well coated. Season with salt and pepper. Serve and top with poppy seeds. Enjoy!
