Good morning, dear friends!  few days ago something magical happened! Our babyboy walked for the very first time! All of a sudden he started walking on hiw own without our help just like that…Oh God, it was such an unforgettable experience! I can’t put it into words how it felt. Our little bird opens his wings and flies on his own…He walks as if he were drunk, his steps are unsteady and he streches his hands in order to balance but he ‘ll get the hang of it!

A collegue of mine who comes from Northern Greece told me that there is a tradition there called «perpatopita» (walkpie). When a toddler takes his first steps, they make a pie to celebrate it and to make his steps sweet! Even if I come from Patras and live in Zakynthos I decided to honour this lovely tradition! My idea was to make a vegan orange pie with syrup and my adorable hubby realized it! The result was out of this world! He made the best orange pie I have ever had! This is a keeper, friends! Ingredients:
2 cups (210 gr.) self rising flour
1 cup (125 gr.) semolina
1 cup (160 gr.) agave syrup
1 cup (100 gr.) ornage juice
3/4 cup (100 gr.) sunflower oil
290 gr. orange
zest from 2 oranges
1/2 tsp cinnamon, clove powder
1 tsp baking soda
for the syrup
1 cup brown sugar
1 cup water
zest from 1 orange

Instructions:

In a bowl combine flour with semolina, clove powder and cinnamon. In a blender pulse orange. In another bowl combine oil with agave syrup and orange. Combine baking soda with orange juice, stir until it rises and pour it in the wet ingredients. Combine the wet with the dry ingredients until well incorporated. Empty it in a greased round pan (24 cm).  Bake in preheated oven at 180 C for about 50 minutes . When cold, make the syrup. Put all the ingredients in a pot and let come to a boil. After 5 minutes remove from heat and pour the hot syrup into the cold pie. Allow to cool completely before serving. Enjoy!

Good morning everyone! The weather has been really bad lately here in Greece! It has even snowed here in Zakynthos! I can’t remember how long it has been since I saw snow. Everything looked as it had been covered with powdered sugar! It was reall lovely but didn’t last long… Today it has been raining all day long! The schools were close so I didn’t have to go to work under these dangerous weather conditions!

I came across this recipe in a vegetarian book. It was love at first sight since I am a huge date fan! I have slightly adapted it and skipped the sauce. I think that it is so yummy that a sauce would be useless! You need to make this date pudding! It was a huge hit in our house and we devoured it in 2 days! All kind of desserts do not last long in our house since both my hubby and I have a sweet tooth!

Πουτίγκα με χουρμάδες

Ingredients:

200 gr. dates, pitted
1 1/2 cups (180 gr.) whole wheat flour Bauckhof
2/3 cup applesauce
100 gr, vegan butter
2/3 cup  coconut sugar Biosophy
1 tsp baking soda and baking powder
1 tsp Ceylon cinnamon Cook
1 tsp vanilla extract
1 cup water

Instructions:

Place dates and water in a pot and allow to come to a boil. Remove from heat, stir in the baking soda and allow to cool. In a bowl combine flour with cinnamon and baking powder. With a hand mixer beat butter with sugar. Gradually add the apple sauce and vanilla extract, vanilla extract. Put the flour gradually into the pot with the dates and stir with a spatula. Then fold in the butter mixture and stir to combine. Empty the dough into a baking dish lined with parchment paper.Bake in preheated oven at 180C for about 40 minutes. Remove from the oven and allow to cool. Top with powdered sugar and cinnamon. Enjoy!

Good morning, dear friends! Another week begins today and I am counting the days until 13th November! That’s when the Athens Marathon will take place, my first marathon after the birth of my son. It is not easy to manage to do everything: raise a baby, go to work, do the household and train for a marathon. I am really tired of all this both physiacally and mentally. You have to be a masochist to go through this, right? I guess all long distance runners, aren’t they? They choose to suffer, suffer and suffer…

What makes me feel sad and sleepy lately is the fact that my 10 month old baby boy starts teething and he is in pain especially during night hours. That means he wakes up 3-4 times every night and his only consolation is my milk! It is as soothing as a pill!

Let’s move on to the recipe now. Today we are making a delicious vegan cake that combines two flavours that are meant to be together: coconut and chocolate! This chocolate coconut cake requires few ingredients, is easy to make and light too! The glaze is optional but recommended! Trust me! You have to try it, guys!

Ingredients:
2 cups self rising flour
2 cups shredded coconut
1 1/2 cups Alpro coconut milk
1/2 cup sunflower oil
3/4 cup agave syrup
1 Tbsp cocoa powder
for the glaze:
1 1/2 Tbsp cocoa powder
2 Tbsp coconut oil
1 Tbsp agave syrup

Instructions:
In a bowl combine flour with shredded coconut. In another bowl stir milk with sunflower oil and agave syrup. Put flour mixture into the wet ingredients and stir to combine. Then place 1/3 of the batter in another bowl and mix it with cocoa powder. Grease a bundt cake pan and empty the first batter and then the batter with the cocoa powder. Bake in preheated oven at 180C for about 40-50′ or until a knife inserted in the ckae comes out clean. Remove from the oven and allow to cool. In a small bowl combine the glaze ingredients and drizzle it over the cake. Enjoy!

As you may have already noticed we are huge avocado fans! This fantastic fruit with the great butter texture works miracles and is so versatile! Today I present you maybe one of the best cakes I have ever made! It combines two amazing ingredients! You cant go wrong with chocolate and avocado, can you? This cake is so dense and delicious! It will disappear in no time! I am sure! Do try it and I bet you will love it as well!

Ingredients (1 loaf + 4 muffins):

3 cups whole wheat flour
1 cup almonds, finely ground (+a few for garnishing)
6 Tbsp cocoa powder
2 tsp baking powder
2 tsp baking soda
2 cups brown sugar
1/4 cup sunflower oil
1/2 cup ripe avocado
2 cups chocolate soy milk
2 Tbsp vinegar

Instructions:
In a bowl combine flour, cocoa, baking power and soda, almonds. In a blender pulse avocado with 2 Tbsp milk until creamy. In another bowl  combine avocado, oil, sugar, vinegar and the rest of the milk. Combine the wet with the dry ingredients. Stir well. Grease a cake tin and empty the batter. Bake in preheated oven at 180 C for about 45-50 minutes until a knife inserted in the middle of the cake comes out clean. Remove from the oven and allow to cool. Then spread the frosting on it and top with coarsely chopped almonds. Enjoy!

Good morning, dear friends! When I gave birth to my babyboy, lots of friends and relatives came home to visit and meet the new member of our family. One of them was my mom’s sweet cousin Olympia. She brought us an amazing greek cake called «melachrino» which means brunette (because of its dark color due to grape molasses) or «ftwcho» which means poor (because of its simple ingredients). It is a greek vegan traditional cake, very easy to make and absolutely mouthwatering! Of course I asked her to give me the recipe and here you are! You should try it! I bet you will love it too!

Το μελαχρινό (ή φτωχό)

Ingredients:
550 gr. self rising flour`
1 cup orange juice+zest, 1 shot of cognac (optional)
1 cup sunflower oil
4/5 cup grape molasses
3/4 cup brown sugar
2 Tbsp cinnamon
1 tsp baking soda
1 tsp Baking powder
1/2 cup walnuts
3/4 cup raisins

Instructions:
In a bowl combine flour, cinnamon, baking powder. In another bowl beat oil with sugar and grape molasses. Combine orange juice with baking soda and pour them in the wet mixture. Then add the dry ingredients into the wet ones. Fold in walnuts and raisins. Empty batter in a greased baking tin and bake in preheated oven at 180C until a knife inserted in the center comes out clean. Allow to cool before seving. Enjoy!
