Sweet butternut squash bread

After my first successful experiment to bake my butternut squash bread, I decided to make a sweet version as well. While baking it, my hubby said the Christmas aroma lingered over the house. It is so nice to connect perfumes with people, facts, periods of your life…Christmas is not so far away, actually there are only 2 months left! These sweet butternut squash breads turned out great! Made with pure ingredients, sugarless, eggless and low fat of course! The perfect school snack! Have a lovely weekend, dear friends!

Ingredients (for 5 mini loaves):

300 gr. butternut squash puree
700 gr. self rising flour
1 ripe banana
1 cup raisins
1 cup pecans, coarsely chopped
4 Tbsp olive oil
4 Tbsp agave syrup
1 Tbsp cinnamon
1 tsp clove powder
1 tsp nutmeg

for the topping (optional):
6 Tbsp oats
4 Tbsp agave syrup
2 tsp vegan butter
2 tsp cinnamon

Instructions:
Chop butternut squash and let cook in boiling water until soft. Then blend it until smooth. In a bowl place butternut squash puree. Combine it with mashed banana, agave syrup, pecans, olive oil and spices. Add flour and knead until you get a non sticky dough. Give the desired shape to your loaves. Lay them on a baking tray lined with parchment paper. Optionally mix the topping ingredients and put them on the loaves. Bake in preheated oven at 180C (fan oven) for about 20-25 minutes (baking time depends on the oven and the size of the loaf). Enjoy!
