Super easy eggplant pepper pie

Hello, my dear friends! Today we are making a delicious eggplant pie! It is  very easy and quick to make and it is loaded with veggies. It is inspired by this zucchini pie. I hope you enjoy it as much as we did!

 Ingredients:
3 cup eggplants, diced
1 cup red-green-orange-yellow pepper, finely chopped
1 big onion, finely chopped
1/2 cup parsley, finely chopped
5 eggs
1 1/2 cup flour
1 cup kefalotiri or pecorino, grated
1 cup olive oil
pepper

Instructions:

In a bowl whisk the eggs and olive oil together with a whisker. Add onion, parsley, pepper and kefalotiri cheese. Put the peppers and diced eggplants (soak them in salted water for 30 minutes and rinse them before cooking them) in a large bowl. Sprinkle with the flour and stir them until they are coated. Pour the egg mixture over. Combine everything well. Grease with olive oil a rectangular ovenproof pan and empty the veggies in. Place the pan on the middle self of the oven and bake at 170ºC, for 45-50 minutes, until the pie sets and turns golden brown. Enjoy!
