Good morning, dear friends! I am a huge jam fan! I love spreading them on good quality bread and I really enjoy them. My favourite jam is made with apricots. When I make this jam, I feel like capturing the taste of summer in a jar! This time I wanted to healthify it by using an alternative sweetener and make it sugarfree. So I opted for stevia. I liked the result although to be 100% honest with you, I prefer the sugar version. But for those who avoid sugar for health/diet reasons (such as diabetes) I think it is a brilliant choice and I am sure they will enjoy it.

Ingredients (yields 2 small jars):
1 kg apricots (without kernels)
7 Tbsp stevia (1/3)
1 tsp agar agar
1 Tbsp lemon juice
2-3 pelargonium leaves
Wash, depit and chop apricots. Place them in a large pot and bring them to a boil on medium heat and keep stirring with a wooden laddle. After 15 minutes add stevia and then agar agar. Stir well. When jam starts to get thick, pour lemon juice and stir for a while. Remove from heat and empty hot jam in sterilised jars. Turn them upside down. When open, store in the fridge. Enjoy! .
