My dear friend and colleague Natasa brought me many strawberries the other day. I made a lot of things with them: salads, jam, sorbet and the best thing was this delicious dessert! I made a strawberry sauce and spread it on an oat crust. My family enjoed these squares a lot! The best way to satisfy our sweet tooth!

for the crust:
1 1/2 cup oats
1 cup whole wheat flour
1/2 tsp baking soda
a pinch of salt
1/2 cup brown sugar
1 Tbsp flax seeds+ 3 Tbsp water
1/2 cup canola oil
1/4 cup agave syrup
2 Tbsp soy or almond milk
1/4 cup pure maple syrup
2 Tbsp popped amaranth
for the strawberry sauce:
2 1/2 cup strawberries, finely chopped
4 Tbsp agave syrup
5 fresh mint leaves, finely chopped
For the crust: Combine all the dry ingredients. In another bowl combine water with flax seeds.Let sit for a few minutes. Then add all the wet ingredients. Then pour the wet mixture into the dry and stir to combine. Set aside 1/2 cup of the crust to top the squares. Line a baking sheet with parchment paper and empty the batter. Press with your fingers until evenly spread.
For the strawberry sauce: In a saucepan bring strawberries to a boil and simmer for 15 minutes on medium heat. Keep stirring. Add agave syrup and fresh mint leaves 2-3 minutes before moving from heat.
Let the sauce cool. Then spread it over the crust. Top with the 1/2 cup of the crust (crumbled) and popped amaranth. Bake in preheated oven at 180C for 30-35 minutes. Allow to cool before cutting into squares. Enjoy!
