Good morning, people! Inspired by my lemon mousse I made the other day, I decide to make a another mousse with my favourite spring fruit that is strawberries! I am totally in love with them! They should get the prize of the cutest fruit (if such a prize existed! LOL!) Anyway, the recipe is simple, easy and quick to make, requires few ingredients, it’s healthy, yummy and beautiful! Pulse in a blender 100 gr. strawberries. Drain silken tofu and pat it dry. Blend it with the fruit. Then add stevia, chia seeds and lemon juice. Pulse until well combined. Finely chop 70 gr. strawberries. In two glasses/bowls put some of the chopped fruit. Cover with the mousse and then top again with the rest of the strawberries. Top with chocolate flakes and store in the fridge to set and chill for 2-3 hours. The next day it tastes even better! Enjoy!
