Split pea balls

When I was a little girl, I hated legumes! Now things have changed and I really love them! I had tried yellow split peas many years ago in a taverna in Crete but I didn’t like them. But when my daughter’s grandmother made them I was amazed with their taste! So I decide to make them myself! I made the traditional puree and with  the rest of it I made balls. They turned out amazing! Even my daughter loved them. So let’s start cooking, friends!

Ingredients (yields 19-20 balls):
260 gr. yellow split peas
320 gr. warm water
340 gr. zucchini
1 medium carrot
1 leek (the white part)
1 medium onion
2 garlic cloves
120 gr. bread crumbs
2 Tbsp fresh peppermint
8 Tbsp olive oil
2 Tbsp turmeric
salt and pepper

Instructions:
Place split peas in a pot with warm water and allow to cook until water is absorbed. Then mash it with a blender, pour olive oil. In a blender pulse all the veggies and combine it with mashed split peas. Add bread crumbs, turmeric, salt and pepper. Mix to combine. If the dough is not solid, add more crumbs. Let cool in the fridge for at least 30 minutes. Make balls with the dough and place balls on a baking sheet lined with parchment paper. Bake in preheated fan oven at 180-200C for about 20-25 minutes. They keep well in the freezer, so you can make a large quantity, bake some and freeze the rest. Enjoy!
