Cauliflower is one of my favorite vegetables. Unfortunately here in Greece it is not very popular and Greeks usually have it as a salad or cook it in red sauce. I have realised that abroad cauliflower has gained popularity these last few years and features as one of the most versatile veggies. No wonder why. Here on the blog we have cooked in many different ways such as soup with goji berries, green cauliflower salad with coconut bacon, augratin with portobellos and walnut crust and cauliflower broccoli bake.

Today it’s high time we made a brand new version of it and transformed it into «rice»! Just put florets in a blender and pulse until riced. Then transfer in a pan, use spices you like and make a new kind of rice: light, yummy, healthy. As simple as that!

Σαλάτα με πικάντικο «ρύζι» από … κουνουπίδι

Ingredients:
1 medium cauliflower
1 big onion, finely chopped
2 garlic cloves, minced
3 Tbsp olive oil
1 tsp turmeric
1 tsp smoked paprika
3 tsp dried mint
1 Tbsp mustard
salt and pepper
balsamic cream or lemon juice

serve with mushrooms, peppers, green salad or whatever else you may like

Instructions:
Pulse cauliflower florets in a blender until «riced». Transfer in a non sticking pan and cook along with onion, garlic, paprika, mint and turmeric. Stir often. After 15 minutes remove from heat, season with salt and pepper, add mustard, olive oil and lemon or balsamic cream and mix until well combined. Serve with veggies of choice. Enjoy!
