Spicy baked okra

If somebody asks me in the future what I craved for during my pregnancy and I ate in large quantities my answer will come as a surprise: lentil stew, soups, baked okra and salads! I remember one day I had 2 dishes of lentils and my belly was really bloated. I thought I would explode! You see all this kind of food is rich in fiber and cause bloating. Considering the fact that I am pregnant and I already have a bloated belly, you can imagine what that means!

I fell in love with this dish at first bite! I am a huge okra fun and decided to cook them in a different way (I always bake them greek style). So I skipped tomato and added a spicy touch. The combo of smoked paprika and turmeric is divine! You should try them! Kisses and hugs, friends!

Ingredients (serves 2):
500 gr. okra
1 red onion, sliced
1 red pepper, sliced
2 garlic cloves, finely chopped
1/2 tsp smoked paprika and turmeric
oregano, salt and pepper to taste
4 Tbsp olive oil
6 Tbsp mustard
1 glass of water

Instructions:
In a baking dish place okra and veggies. Season with salt and pepper. In a bowl combine olive oil with mustard and spices. Pour this mixture over the veggies and and mix with your hands until well coated. Pour 1 glass of water and bake in preheated oven at 180C for about 50 minutes until golden brown and tender. Enjoy!
