Good morning, people! This is the last post written from the house of godmother Eleni. The time has finally come to move to our new home. After so many obstacles and hardship we have made it and hopefully tonight we will spend our first night there! I am very tired but so excited as well! The new school year starts today, so I wish happy new school year to our kids, teachers and parents!

Today we are making a simple yet very tasteful dish packed with nutrients: basmati rice with lentils and veggies. The ideal meal to take at work or at school. It tastes heavenly even when it is cold. Have a lovely day!

Φακόρυζο με πικάντικα λαχανικά

Ingredients (serves 4):
250 gr. basmati rice
1 cup lentils
1 leek
1 medium eggplant
1/2 red, orange, yellow pepper
2 garlic cloves
4 Tbsp olive oil
1 tsp turmeric
1 tsp cumin
salt and pepper

Instructions:

Cook lentils and rice in separate pots. Finely chop veggies and saute them in olive oil for a few minutes. Add spices and 1/2 glass of water and let cook. Season with salt and pepper. When everything is ready, serve either by stirring all ingredients (third and fourth pic) or spreading them in layers (first and second pic). It is delicious even when you get it right out of the fridge! Enjoy!
