After the previous post and the exciting mnews that my veggie sister is pregnant today we have a sweet treat for you! We will celebrate this wonderful news with a scrumptious vegan ice cream! Date caramel+pecans is a magical combo! This ice cream tastes heavenly and is so healthy! It is good for you and your kids! So do make it! Top it with agave syrup, cinammon or melted chocolate! I am sure you will love it!

250 gr. coconut milk (chilled overnight)
300 gr. silken tofu
60 gr. pecans, roughly chopped (or walnuts)
70 gr. date caramel
3 Tbsp agave syrup
1 Tbsp vanilla extract
Beat silken tofu in a mixer for 2-3 minutes and then add chilled coconut milk and beat agin for 5 minutes. Add agave syrup, vanilla extract, beat again. Finally fold in pecans. Empty mixture in an icecream container or a springform tin (if you want to make it look like a cake) and fold in spoonfuls of date caramel. Allow to chill in the freezer for at least 8 hours. Enjoy!
