A simple mediterranean dish with ogarlicky tomato sauce, olives, capers and xinomizithra! The essence of summer in a dish! So, let’s cook!
350 gr. «Dirfys» tagliatelle with lentinula (shii-take)
1/2 red and 1/2 green pepper, finely chopped
2 Tbsp caper, rinsed
6 tomatoes, grated
3 garlic cloves, minced
8 «Threpsi» kalamata olives, finely chopped
200 gr. Amari cretan xinomizithra
4 Tbsp «Threpsi» extra virgin olive oil
1 tsp» cretan herbs oregano» +10 fresh basil leaves
«Threpsi» sea salt in flakes
Instructions: In a pot put tomatoes, peppers, garlic and basil. Bring to a boil and allow to simmer. When liquid is evaporated, add olive oil, olives, capers and season with salt and pepper. Remove from heat. In the meanwhile cook fusili according to package instructions. Put strained pasta into the sauce and stir until well combined. Add cheese. Sprinkle with oregano and serve. Enjoy!
