Good morning, dear friends! After a very tiring weekend the only pleasant thing I recall are these yummy cute coconut truffles! I am addicted to chocolate (I guess most of you are too!) and I love the chocolate coconut combination! Chocolate pairs well with strawberry, orange, cinnamon, coconut, with everything, doesn’t it? These truffles contain 3 coconut products: milk, shredded coconut and oil. They are easy and quick to make but above all they are mouthwatering! You have to try them! Happy February everyone!
Recipes with coconut
Ingredients ( yields 12 truffles ):
1 3/4 cups shredded coconut, divided
½ cup oat flakes, ground
2 tsp melted coconut oil
3 Tbsp agave syrup
1 Tbsp mandarin juice
zest of 1 mandarin
2 Tbsp unsweetened coconut milk
1/2 tsp vanilla extract
1/2 tsp ground cinnamon
150 gr. vegan chocolate, melted for coating
Place 1 cup of shredded coconut in a food processor along with the coconut oil. Process on high speed, scraping down the sides periodically, until it reaches a paste-like consistency.Add the agave syrup, oat flakes, coconut milk, vanilla, cinnamon, mandarin juice and zest and process until well combined. Add the remaining shredded coconut and pulse until just combined. Put in the fridge for 15 minutes and then shape the mixture into 12 balls and coat with shredded coconut or dip each truffle in a bowl with 150 gr. melted chocolate and place on a parchment paper. If it’s hot, store in the fridge.
