The constant question that is on our mind every day is «what shall I cook today». You have to be innovative and use your fantasy so that you don’t get bored eating the same meals day by day! Today we are cooking a yummy dish with roots baked in orange juice served with quinoa. You could serve with bulgur, millet or basmati as well. If you are on a low carb diet skip the grains and stick to the veggies. They are perfect one way or another!

1 celery root, chopped
2 leeks, sliced
1 fennel bulb, sliced
1 onion, finely chopped
2 scallions, sliced
2 carrots, sliced
3 fresh oregano twigs
6 fresh sage leaves
3 Tbsp mustard
6 Tbsp olive oil
2 glasses of fresh orange juice
salt and pepper
Serve with quinoa, basmati, millet, bulgur.
In a baking dish place all the veggies. Season with salt and pepper. Combine olive oil with mustard and orange juice. Pour over the veggies and toss until well coated. Bake in preheated oven at 200C for about 50-60 minutes. Serve with quinoa, bulgur, millet or basmati. Enjoy!
