One of the reasons I love summer is the vast variety of summer vegetables: tomatoes, zucchini, eggplants, peppers, I just adore them and I am anxious to develop new recipes with them! Today I am sharing with you a delicious, filling and wholesome dish that you can have either as a main or as a salad: roasted veggie millet with tahini sauce. This is a light meal ideal for hot summer days. It keeps well in the fridge and is yuumy even when it is cold! If you are not a millet fan, you could use rice or quinoa.

Ingredients (serves 3-4):
1 cup millet
1 zucchini
1/2 orange/ red/ yellow pepper
1 eggplant
1 onion
oregano
2 Tbsp olive oil
salt and pepper
for the sauce:
3 Tbsp tahini
2 Tbsp olive oil
10 mint leaves
1 garlic clove
juice of 1/2 lemon
1/2 tsp cumin
salt and pepper

Instructions:
Chop veggies, place them in a bowl, pour 2 Tbsp olive oil and season with salt and pepper. Stir to combine. Transfer them on a baking sheet lined with parchment paper and bake in preheated oven at 200C until roasted. In the meantime cook millet according to package instructions. In a blender pulse all sauce ingredients until smooth. Put cooked millet on a platter, top with roasted veggies and drizzle the sauce all over. Enjoy!
