I love zucchini! It is one of the most versatile veggies and can be used in so many ways! So when God gives you zucchini, you have to figure out what to do with them: you will make chocolate brownie, chocolate cake, savory cake, kataifi pie, briam, omelette, zucchini pie + zucchini pie, potatoes, tart, lasagna. They are perfect for salads, when shredded they give moisture and make the salad refreshing. See this spinach avocado salad. But in this recipe I am sharing with you today zucchini hold the first role. Cut in very thin slices, scented with basil and topped with other yummy veggies they make a simple yet tasteful summer salad!

2 zucchini, very thinnly sliced
1 red pepper, roasted and finely chopped
1 scallion, finely chopped
2 Tbsp caper, rinsed
2 Tbsp pistachios, coarsely chopped
2 Tbsp olive oil
1 Tbsp balsamic cream
5-6 fresh mint leaves
salt and pepper
Season with salt and pepper the zucchini slices. Place them on a dish. Top with peppers, scallion, capers, pistachios and mint. Pour olive il and balsamic cream. Enjoy!
