Although I love legumes and try to eat as often as I can, I have to admit that I do not particularly like black-eyed peas. I find their taste a little flat…That notion changed a few days ago when I came up with this recipe. I made a red pepper pesto which was delicious and coated the peas with it. Suddenly they were transformed! We liked them a lot! You can enjoy them as a salad or main course. Do try them and I am sure you will love them!

250 gr. black eyed peas, cooked
1 zucchini, thinly sliced for garnishing
3 roasted red peppers
2 Tbsp pistachios
1 big garlic clove
1 handful of mint leaves
5 Tbsp olive oil
2 Tbsp balsamic cream
salt and pepper
In a blender place peppers, garlic, mint, pistachios, olive oil, balsamic cream and pulse until smooth. Season with salt and pepper. In a bowl place cooked black-eyed peas and pour pesto. Stir to combine. Place peas in the center of a dish and garnish with zucchini slices. Enjoy!
