Hello, dear friends! Today we are making a very special dessert that I am sure you will love! Raw sugarfree gateaux made with fruit, nuts and cereal. It is wholesome, packed with nutrients and above all it is mouthwatering! You should definitely try it! It has 3 layers: a crust made of oats, dates and almonds, a cream made of bananas and cashews and a chocolate avocado glaze. It is scented with refreshing mint leaves. To cut a long story short this vegan deliciousness is out of this world! Trust me!

for the crust:
1 1/4 cups (100 gr.) oats, ground
1 cup (200 gr.) dates, soaked in warmwater for 1 hour
1/4 cup (40 gr.) raw almonds, ground
2 tsp cocoa powder
1 Tbsp water
8 mint leaves
for the white cream:
190 gr. (2) ripe bananas
1cup raw cashews, soaked in warm water for 2 hours
3 1/2 Tbsp coconut oil
1 Tbsp stevia 1/3
5 mint leaves
for the glaze:
165 gr. ripe avocado
1 Tbsp coconut oil
2 Tbsp stevia
3 Tbsp cocoa powder
2 Tbsp (soy) milk
1 tsp vanilla extract
5 mint leaves
For the crust: Pulse dates in a blender until you get a nice paste. Add the rest of the ingredients and pulse again until well combined. Empty the mixture into 4 mini tart moulds. Press the crust with your fingers. Put in the fridge.
For the white cream: Pulse cashews until creamy. Then pulse the rest of the ingredients until well combined. Spread the cream onto the tarts and even it with a spatula. Put back in the fridge for 2 hours.
For the glaze: Pulse avocado until creamy. Then pulse the rest of the ingredients until well combined. Spread the glaze over the tarts. Cover with aluminium foil and store in the fridge. Allow to set overnight. The other day serve. Top with coarsely chopeed almonds and garnish with mint leaves. Enjoy!
