Living in a touristic place such as the island of Zakynthos can be sometimes strange. One odd thing that happens here every year is that there are places that «fall asleep» during winter and are practically dead, since there is no sign of life there. But when spring comes and as summer gets closer these places get alive and are packed with tourists! I do not complain though! I feel blesses living in such a wonderful place full of amazing landscapes. Watching the sun rise from the sea every morning fills my heart with gratitude…
Let’s get down to cooking a yummy snack that I am sure your kids will love. Chocolate and coconut are a perfect combo and these cute cups are going to steal your heart!

Ingredients for 6 cups:
1 cup shredded coconut
100 gr. silken tofu
1 tsp cocoa powder
1 tsp chocolate tahini
2 Tbsp maple syrup (or sweetener of choice)
2 Tbsp hazelnuts
2 Tbsp quinoa flakes (or oats)
for the chocolate layer:
3 Tbsp coconut oil
2 Tbsp cocoa powder
3 Tbsp maple syrup
In a bowl combine shredded coconut with ground hazelnuts, cocoa powder and quinoa flakes. In another bowl combine maple syrup with silken tofu and chocolate tahini. Unite these two mixtures and stir to combine. In a bowl combine coconut oil with cocoa powder and maple syrup. Transfer batter into 6 muffin cases and press with your fingers. Spread on each one some chocolate topping. Put in the fridge until firm. Enjoy!
