I have fallen in love with quinoa lately! It is such a versatile grain. It is easy and quick to make and you can use it in so many ways! I love adding quinoa in my salads and lately in my frittatas. This is a yummy light and filling meal. Keep in mind that quinoa is a superfood! It is packed with nutrients and is rich in protein. You should definitely include it in your nutrition.

1 cup quinoa, cooked
2 zucchini, very thinnly sliced
1/4 cup sun-dried tomatoes, finely chopped
3 Tbsp pecorino, grated
2 garlic cloves, minced
1 small onion, finely chopped
basil, finely chopped
3 Tbsp olive oil
salt and pepper
In an ovenproof pan saute garlic with onion and zucchini for a few minutes. Add sundried tomatoes and basil. Remove from heat and clean the pan. Beat eggs, season with salt and pepper and add cheese and cooked quinoa. Stir to combine. In the end add the zucchini mixture. Empty in the pan and cook in preheated oven at 200C for 20-25 minutes.
